A Secretaria de Agricultura e Abastecimento por meio da Coordenadoria de Desenvolvimento dos Agroneg\u00f3cios (Codeagro) separou algumas dicas para saborear da forma mais saud\u00e1vel poss\u00edvel esses pratos.<\/span><br \/>\n<span style=\"font-family: Arial; font-size: medium;\">\u201cAs sopas devem ser preparadas conforme a prefer\u00eancia da pessoa. Com um bom tempero, utilizando ingredientes saud\u00e1veis como legumes e verduras, e adicionando algum tipo de prote\u00edna, animal ou vegetal, torna a sopa mais saborosa e nutritiva\u201d, disse a nutricionista da Codeagro Katlly Evillim Sousa.<\/span><br \/>\n<span style=\"font-family: Arial; font-size: medium;\"><u>Aqui est\u00e3o algumas dicas:<\/u><\/span><\/p>\n<ul>\n<li><span style=\"font-family: Arial; font-size: medium;\">Prepare com legumes e hortali\u00e7as frescas (abobrinha, vagem, cenoura, ab\u00f3bora, espinafre, escarola, acelga, berinjela, br\u00f3colis, chuchu, etc.);<\/span><\/li>\n<li><span style=\"font-family: Arial; font-size: medium;\">Use e abuse de temperos naturais como salsinha, cebolinha, or\u00e9gano, alecrim, louro. Al\u00e9m de alho e cebola, que v\u00e3o deixar a sopa bem saborosa;<\/span><\/li>\n<li><span style=\"font-family: Arial; font-size: medium;\">Prefira cereais como arroz, macarr\u00e3o integral, trigo em gr\u00e3os e farelo, farinha de linha\u00e7a, amaranto, chia, quinoa, aveia em flocos, cevada ou cevadinha;<\/span><\/li>\n<li><span style=\"font-family: Arial; font-size: medium;\">Inclua feculentos (batata, inhame, car\u00e1, mandioca, mandioquinha ou batata doce) e leguminosas (feij\u00e3o, gr\u00e3o-de-bico, lentilha, soja ou ervilha);<\/span><\/li>\n<li><span style=\"font-family: Arial; font-size: medium;\">Escolha cortes magros de carne bovina ou de frango e peixes;<\/span><\/li>\n<li><span style=\"font-family: Arial; font-size: medium;\">\u00c9 preciso aten\u00e7\u00e3o na escolha dos ingredientes para n\u00e3o adicionar carboidratos excessivamente ou alimentos ricos em gorduras (paio, lingui\u00e7a, bacon, costela, creme de leite, queijos gordos&#8230;);<\/span><\/li>\n<li><span style=\"font-family: Arial; font-size: medium;\">Caldos industrializados tornam a sopa desequilibrada, com alta densidade energ\u00e9tica e rica em s\u00f3dio;<\/span><\/li>\n<li><span style=\"font-family: Arial; font-size: medium;\">N\u00e3o compre as sopas de pacotinho, s\u00e3o muito artificiais e ricas em s\u00f3dio.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: Arial; font-size: medium;\">Essas escolhas s\u00e3o muito mais saud\u00e1veis e nutritivas do que a op\u00e7\u00e3o de sopas e caldos prontos, que cont\u00eam muito sal (s\u00f3dio), gorduras e conservantes em sua composi\u00e7\u00e3o. Sendo assim, podem apresentar muitas calorias e pouco ou nenhum nutriente. Outra op\u00e7\u00e3o s\u00e3o os cremes de hortali\u00e7as (aspargo, cebola, couve-flor, espinafre, palmito, etc.). As mesmas bases usadas para molhos, servem para as sopas-creme, como velout\u00e9, bechamel, acrescentando-se caldo, leite ou ovos.<\/span><br \/>\n<span style=\"font-family: Arial; font-size: medium;\">\u201cA maioria das sopas s\u00e3o simples e de f\u00e1cil preparo. Os ingredientes s\u00e3o de uso di\u00e1rio e ela pode ser feita em panela de press\u00e3o para acelerar o cozimento. Al\u00e9m de ser de f\u00e1cil preparo, a sopa pode auxiliar em dietas, pois a maioria \u00e9 de baixa caloria\u201d, resaltou Katlly.<\/span><br \/>\n<span style=\"font-family: Arial; font-size: medium;\">Existe uma grande variedade de sopas, a maioria delas \u00e9 servida quentes, por\u00e9m temos a op\u00e7\u00e3o de servi-las fria tamb\u00e9m, como por exemplo o Gazpacho, que tem origem espanhola e a vichyssoise que tem origem francesa e pode ser servida quente ou fria.<\/span><br \/>\n<span style=\"font-family: Arial; Lave a salsinha, pique-a e reserve. Lave as folhas de escarola, pique-as e reserve. Lave, retire as sementes do tomate, pique-o em cubinhos e reserve. Em um recipiente, misture a carne mo\u00edda, a cebola e o alho processados, 1 colher (ch\u00e1) de sal, os ovos, a salsinha e a farinha de trigo. Misture bem e, separando 1\/2 colher (ch\u00e1) dessa mistura (aproximadamente 2g), fa\u00e7a pequenas alm\u00f4ndegas, modelando-as na palma das m\u00e3os untadas com um pouco de \u00f3leo. Em uma panela, aque\u00e7a o \u00f3leo e refogue a cebola picada. Junte o tomate picado e deixe murchar. Adicione 2 colheres (ch\u00e1) de sal e a \u00e1gua. Tampe e deixe ferver. Junte as alm\u00f4ndegas, misture e tampe novamente. Deixe cozinhar por 10 minutos. Acrescente a escarola picada e, com a panela tampada, deixe cozinhar por mais 10 minutos.
